Kalakand For Diwali

Kalakand or Qualaqand are soft melt in the mouth milk squares that are very popular in north India particularly during the Diwali Festival. They are known for their superb taste and richness. The origin of Kalakand is from the Braj area of Uttar Pradesh, India which is known for its pure milk.
Kalakand is especially popular in the eastern parts of India. The word quand stands for sweets in Arabic.

You can easily prepare Kalakand for Diwali at home using one of the recipes given below:

Traditional

Ingredients
10 cups milk
Alum powder ¼ teaspoon. You can also use citric acid (1/2 tsp.) dissolved in water.
4 tablespoon sugar.
½ tablespoon Ghee (clarified butter) for greasing
Method

Boil milk in a thick bottomed pan on a low heat.
Keep on stirring so that it does not stick to the bottom.
When the milk starts to thicken a little (i.e. reduces to 3/4th of the quantity) add alum powder to it.
Keep stirring until milk becomes granular and a reduces to a solid mass.
Add sugar and mix well.
Keep on stirring till mixture thickens again (5 to 10 mins.).
Grease an aluminum tray with ghee.
Pour the mix into the tray and spread evenly.
Let it set in a cool, dry place. When the mix is set cut it in square shapes and serve.


Express

Ingredients
1 can condensed milk
1 tablespoon yogurt
½ tablespoon ghee for greasing
1 tablespoon cardamom powder
Method

Take a deep glass microwave proof bowl and add all the ingredients except for ghee to it.
Microwave on high for 2 minutes. Take out stir and microwave again for 2 minutes.
Repeat the process two more times.
Let it stand for three minutes.
Pour on a greased aluminum tray and let it set for few hours.
Cut in square shapes and serve.


Garnish

Before serving you can garnish it with some silver foil on the squares.
Garnish with grated cashew nuts, pistachios, and hazelnut.
You can also add some saffron strands as garnish.

Cut the Kalakand in interesting shapes using various molds such as round, diagonal, flowers etc.

Gulabjamuns make a very tasty sweet treat for the Diwali preparations. Children especially love these deep fried balls soaked in sugar syrup. They are very easy to make and can be prepared in half an hour. Here are some easy recipes for Gulabjamuns. Better still, the ingredients are easy to find any the dish can even be prepared by novices for Diwali 2011:

1.     What you need:

Milk powder (made of cow’s milk)- 1 cup
All-purpose flour- ½ cup
Clarified butter (ghee) for frying.
Baking soda- ½ teaspoon.
For the sugar syrup

Sugar- 2 cups
Water 1 cup


To prepare:


  • Mix milk powder, all-purpose flour and baking soda in a bowl.
  • Add a little water to make a soft dough. Knead the dough so that no lumps are present.
  • Divide the dough into 10-15 parts to make smooth round balls.
  • Sugar syrup:

  • Boil 2 cups of sugar in 1 cup of water.
  • Boil until the mixture thickens to one-string consistency.
  • Remove from heat and cool.
  • Heat the ghee and fry the balls in low heat until golden in color.
  • Drain and drop each ball in the sugar syrup.
  • Let it soak for the ½ hour and your Gulabjamuns are ready to serve.



2.     What you need

250 grams of Khoya (mawa) made from cow’s milk.
One tablespoon refined flour (Maida).
1/4th teaspoon cardamom powder.
3 cups sugar
1 ½ cup water
Clarified butter (ghee) for frying.
To prepare


  • Grate khoya and mix with refined flour.
  • Add cardamom powder to this mix.
  • Add a little water to make a smooth dough.
  • Divide the dough into equal sized round balls.
  • Prepare the sugar syrup by boiling the sugar with water until it thickens to a one-string consistency.
  • Remove from heat and cool.
  • Heat the ghee.
  • Fry the balls in the ghee on a low flame until golden in color. Keep the flame low so that the balls are cooked inside. If the balls crack, add a little more flour to the dough.
  • Drain and drop them into the sugar syrup. Let it sit till the syrup is soaked to the insides of the balls.
  • Garnish:
  • Garnish the Gulabjamuns with raisins, nuts and grated coconut before serving.
  • You can also serve hot Gulabjamuns with vanilla ice cream.
  • Variations


You can stuff the balls with your favorite nut or candy sugar to add a surprise element.
Drain the Gulabjamuns and dip them in chocolate sauce, chill before serving.
Add a few saffron strands in the sugar syrup to give the Gulabjamuns a nice golden hue

This is a popular Pakistani and Indian dish and is especially popular in the areas of the west and the south-west areas of India.

Ingredients required:

1 kg of Cornflour
1 kg of Sugar
1 kg of Ghee (clarified butter)
1 Cup of milk
Almonds, Pistachios, Cashew nuts for garnish
1 teaspoon of Saffron
3 cups of water

Method:


  • Put three cups of water on the boil in a heavy bottomed pan.
  • Add sugar to the water and let it boil for 4-5 minutes till you get a thick syrup.
  • Add milk to the syrup and the impurities will float to the top. Strain.
  • Dissolve corn flour in a little water (make sure there are no lumps).
  • Add to the sugar syrup and put the mix back on a medium heat.
  • Once the mix starts to thicken start adding ghee (one teaspoon at a time).
  • Stir continuously to avoid the mixture sticking to the bottom of the pot.
  • Continue adding till oil start to separate from the mix.
  • Add grated dry fruits and saffron to the mix.
  • Pour the mix on a greased tray and let it set for few hours.

2.     Caramel halwa

Ingredients

Semolina (suji)- 2 cups
Plain white sugar- 1 cup
Pure ghee (clarified butter)- 1 cup
Cardamom powder- 1 teaspoon
Dry fruits for garnish
Water or milk soaked semolina

Method:


  • Wash and soak two cups of semolina in milk/water.
  • Put ghee and sugar in a heavy bottomed pan and let it melt on a low heat.
  • Once the sugar starts to turn golden brown (caramel in color) start adding the soaked semolina and cardamom powder.
  • Stir continuously till the oil starts to separate from the mix.

1 teaspoon cardamom powder
50 grams almonds
Edible silver foil for garnishing.

Method:

  • Finely grind roasted split gram in a mixer.
  • Coarsely grind almonds and mix with the powdered split gram
  • Combine the mixture in a deep bowl and mix rest of the ingredients thoroughly.

Ingredients:

White bread -8 slices
Potatoes -250 grams
Salt
Turmeric powder
Besan (gram) flour 250 grams
1 tablespoon Garam masala
½ teaspoon cumin seeds
Oil for frying
½ teaspoon lime juice
1 tablespoon red chili powder
1 teaspoon carom seeds
1 cup cut onions
Some gram flour sev to garnish

Method:

  • Boil and mash the potatoes.
  • Add salt and lime juice to the potatoes and set aside.
  • In a flat deep bowl mix gram flour, some salt, carom seeds and some water to make a thick batter.
  • Set the gram flour aside to rest.
  • In the meantime take some oil in a pan and add chilly, cumin seeds, garam masala. Once cumin seeds start to flutter add the mashed potatoes and mix well.
  • Now take the bread slices and cut them diagonally.
  • Put some of the mashed potato mixtures on one side of the bread and dip in gram flour batter.
  • Fry on medium heat until golden brown on both sides.
  • When serving cut the toast in fingers and garnish with cut onions, sev and tomato sauce.

2.     Chakli

Rice- 4 cups
Bengal gram (chana dal)- 2 cups
Black gram- 1 cup
Coriander seeds – ½ cup
Cumin seeds – ½ tablespoon
White sesame seeds- ¼ cup
1 teaspoon ajwain (carom seeds)
Red chili powder (according to taste)
Salt (to taste)
Haldi (turmeric powder)- ½ teaspoon
Pinch of asafetida
½ cup of ghee (clarified butter)
Oil for frying


To prepare

  • Roast rice, Bengal gram, black gram individually. Cool
  • Roast the spices and cool.
  • Grind together the rice, Bengal gram, black gram and the spices to make a fine powder.
  • Add asafetida, red chili, turmeric and salt to the powder.
  • Heat the ghee in a pan until smoking hot.
  • Pour in the powder and mix thoroughly.
  • Add a little water to make a soft dough.
  • Put the dough in a chakli mold.
  • Press the mold to make the spiral shapes onto a butter paper.
  • Heat the mold for frying and fry the chakli at a low heat till they’re crisp and golden brown.
  • Drain, cool and store in an airtight container.
Note:

You can also use powdered rice flours available in the market.
You can also make rice chaklis (omit the black and Bengal gram).

3.     Ghathia

Ingredients

½ kg Wheat Flour
1 ½  cups Water
1/2 teaspoon Ajwain (carom seeds)
1 teaspoon red chili powder
1 teaspoon haldi (turmeric) powder
2 tablespoon of Oil
Oil for frying
Salt to taste


To prepare:


  • Sieve the flour and add hot oil to it. Rub well so that you get a crumbly mixture.
  • Add salt, carom seeds, turmeric and red chili powder and mix well.
  • Add enough water to knead the stiff dough.
  • Roll out the dough in a big size chapatti.
  • Cut it into long strips and roll the strips in a twist.
  • Deep fry in hot oil till golden brown in color.
  • Drain, cool and store in an airtight container


Note:

You can add variations by using dried fenugreek leaves or dried spinach leaves
You can give any shape to the ghathia strips before frying.
